Then, the protein content is crucial: we need a specific protein percentage to obtain elastic pasta that holds up during cooking. Gluten quality is another critical aspect because it directly affects the structure of the finished product. Finally, we closely monitor the ash residue, which indicates the level of impurities in the semolina and is closely linked to the milling method used.”
