Ingredients for 4 people
Tortellini alla moda di Bologna (with meat)
200 g red wine
4 g agar agar
1 l meat broth
q.s. Grana Padano
30 g soy lecithin
0.8 l water
q.s. cold peanut oil at 3-4°C
Procedure
Boil the red wine, add the agar agar powder, whisk, and pour the mixture into a squeezer with a fine nozzle.
Pour the mixture into cold oil to form small red wine spheres. Drain and rinse with warm tap water. Mix the water, Grana Padano, and soy lecithin, and blend with an immersion blender to create a generous foam. Cook the Tortellini in plenty of salted water, pour the broth into consommé cups, garnish with the red wine spheres, and finally cover with the Grana Padano foam. Serve.
