Taglierini with porcini mushrooms with Perla Nera 1934

Procedure

DRINK RECIPE

– 3.5 cl Demerara 12-year rum (Guyana)
– 4.5 cl pineapple infusion blend reserve Jamaican Rum
– 3 cl Bermuda 151 overproof rum
– 2 cl lime juice
– 1.5 cl Hawaiki Falernum
– 1.5 cl Don’s mix with allspice
– 1 tsp salted caramel sauce
– 1 drop secret bitters with alkermes
– 4 drops Pernod
– 170 g snow ice

 

PREPARATION

Blended. Decorate with salted caramel ice shell, truffle pearls, ears of corn.

 

OUR COMMENT

The 1934 Zombie becomes spicy. The drink pimento enhances the intense taste of porcini mushrooms. In pairing we find a perfect balance between the pleasant sweet note of mushrooms and the salty notes of the drink’s caramel sauce.
