5 pcs Scrigni® with scampi – Divine Creazioni
500g Datterini Tomatoes
60g Burrata
200g Scampi
2 Limes
Olive oil (as needed)
Salt (as needed)
Procedure
For the Datterini Tomato Sauce:
Cut the washed tomatoes and place them in a saucepan with a drizzle of olive oil and a clove of garlic in its skin. Let them soften, add a little water if necessary, and cook until done. Blend and strain through a fine sieve.
For the Tartare:
Clean the scampi by removing the head, shell, and intestine. Finely chop to make a tartare. Season with a drizzle of olive oil and a little salt.
Cooking the Pasta:
Cook the Scrigni® with scampi – Divine Creazioni in salted boiling water. Remove from the water and toss in a pan with a drizzle of olive oil.
To Serve:
Place two tablespoons of datterini tomato sauce on the bottom of a flat plate, position the parcels on the sauce, add burrata, scampi tartare, and finally grate lime zest over the top.
