Procedure
DRINK RECIPE
– 5 cl gin
– 3 cl fresh lemon sour
– 2 cl home-made raspberry and mint cordial
– 9 cl Franciacorta Docg sparkling wine
PREPARATION
Shake all ingredients except the sparkling wine. Pour, straining, into a flûte and top with sparkling wine. Stir gently before serving.
OUR COMMENT
The food pairing between Risotto with butter and cheese and Franco (French 75 interpretation) is textbook: gin and cheese are a tried and tested, winning pair. The raspberry cordial and lemon give freshness to the pairing. The bubbles of Franciacorta are the trigger to prepare the palate for the next bite.
