16 Quadrelli with Chianina beef meat and king oyster mushrooms Divine Creazioni Surgital
kg. 1 Chianina beef bones
1 celeriac
1 bunch of basil
1 bunch of rosemary
Salt and pepper to taste
Garlic
Procedure
Sweat the Chianina bones in a pan with rosemary, salt, and pepper. Once the bones are well-browned, add water and let it reduce until the mixture reaches the desired density and flavor. Blanch the celeriac, previously cut into pieces, in plenty of salted water.
Once ready, continue cooking in a pan, seasoning with garlic. Separately, blanch the basil and blend it into the mixture to obtain a green, pasty sauce. Strain through a chinois to achieve a smooth mixture. Cook the Quadrelli, drain them, and plate the dish.
