Ingredients for 4 people
For the blueberry mousse
150 g fresh cream
70 g grated Grana Padano DOP
100 g fresh blueberries
Fine salt to taste
For the Bauletti®
4 Bauletti® with porcini mushrooms and “Taleggio DOP” cheese Divine Creazioni®
Olive oil to taste
For the garnish
Black truffle slices
Elder flowers
Procedure
Heat the fresh cream in a saucepan. Leave to cool, then add the Grana Padano DOP and the blueberries. Whisk, add a pinch of salt, strain and pour the resulting cream into a siphon with its prescribed charges.
Cook the Bauletti® in boiling salted water according to the indicated timings. Drain, allow to cool. When ready to use, heat a non-stick pan, grease it lightly with oil and then plate the Bauletti® on both sides.
Divide the blueberry mousse among the individual serving plates, lay the Bauletti® on top, and finish with the truffle shavings and edible flowers.
SUGGESTIONS
It is possible, as in this recipe, to serve the Bauletti® in different ways such as entrée, amouse bouche or hors d’oeuvre not only in catering but also in banqueting. The selection of the serving dish is subjective: crystal containers or Martini cups are also particularly suitable.
