Gnocchi with tomato and mozzarella with Celery Fizz

Procedure

DRINK RECIPE

– 40 ml Roku gin
– 50 ml clarified celery extract
– 20 ml lemon juice
– 20 ml orange syrup/cardamom
– 40 ml soda
– 1 dash Bitter Violento

 

PREPARATION

Shake all ingredients except soda and bitter. Strain into highball glass. Top up with soda and bitters. Serve with ice chunks. Decorate with celery sprout.

 

OUR COMMENT

A perfectly successful combination of a contemporary fizz and a fragrant, tasty dish of gnocchi with tomato and mozzarella. The fresh and herbaceous part of celery is the protagonist of a perfectly successful marriage with tomato. The gin and its citrus notes balance the sweet flavour of the gnocchi and mozzarella.
