Ingredients for 4 people
16 Quadrelli with lamb and thyme Divine Creazioni Surgital
4 lamb sweetbreads
g. 150 broccoli stalks
ml. 50 vegetable oil
ml. 20 hazelnut oil
g. 30 dry breadcrumbs
g. 30 whole egg
ml. 100 meat reduction
12 sorrel leaves
12 dyeing chamomile leaves
12 dried broccoli leaves
Vegetable marrow
Procedure
Steam the broccoli stalks for about 3 hours, then blend and strain. Season with salt, pepper, and hazelnut oil; shape into a roll and freeze.
Bread and fry the lamb sweetbreads after blanching them in water and vinegar for about 5 minutes. Cook the Quadrelli in plenty of salted boiling water. Meanwhile, finish cooking the vegetable marrow and fried sweetbreads in the oven. Once cooked, drain the Quadrelli and place them on a plate with the sweetbreads, vegetable marrow, and meat reduction. Garnish with wild herbs.
