Ingredients for 4 people
12 Panciotti® with scallops and North Sea prawns Divine Creazioni Surgital
8 prawns
1 red pepper
Half a vanilla pod
5 g vinegar
Salt
Extra virgin olive oil
1 garlic clove
Procedure
Season the pepper with salt and oil, place it in a baking dish with the crushed garlic clove. Roast in the oven at 160°C for 30 minutes. Once cooked, peel the pepper, remove the seeds, and blend it with salt, oil, and the grated vanilla pod. Prepare a tartare with 4 prawns and sear the remaining 4 in a pan. Cook the Panciotti® for 6 minutes, plate them with the pepper cream, the shaped tartare, and the seared prawns. Drizzle with extra virgin olive oil.
